Black Bean Lime Salad

Makes enough for 2 large salads and leftover dressing.

Salad Ingredients

  • 1 14oz can black beans (or 1/2 cup dried, fully cooked)
  • 1 tomato, chopped
  • 1 bell pepper, chopped
  • 1/4 cucumber, chopped
  • 2 green onions, chopped
  • 1/4 cup fresh parsley or cilantro, chopped

Salad Directions

  1. Rinse and drain the beans. If you’re using dried beans, they must be fully cooked before you begin. How to cook dried beans.
  2. Toss the cooked beans and vegetables together in a bowl, drizzled with some lime-sunflower dressing.

Lime-Sunflower Dressing Ingredients

  • 2 Tbsp sunflower seed butter (or any other nut/seed butter)
  • 2 Tbsp fresh lime juice (or 1 Tbsp concentrate)
  • 2 Tbsp water
  • Lime zest (optional)
  • 1/2 tsp ground cumin
  • 1/2 tsp ground coriander
  • Pinch ground cayenne
  • Sea salt or Herbamare, to taste

Lime-Sunflower Dressing Directions

  1. Whisk together the nut/seed butter and lime juice until it thickens, then add the water and stir until it’s smooth.
  2. Mix in the zest and spices, and taste for seasoning. Add salt to bring the flavors together.
