Massaged Kale with Asian Peanut Sauce
Servings: 2 large salads
Ingredients
- 2 cups kale, chopped and massaged
- pinch sea salt, or Herbamare
- 1 Tbsp peanut butter, (or almond, sunflower, etc)
- 1 Tbsp apple cider vinegar
- 1 Tbsp tamari, soy sauce
- 1 Tbsp water
- 1 tsp toasted sesame oil, optional
- 1 tsp fresh ginger, grated and juiced (optional)
- 1 Tbsp green onion, chopped
- 2 Tbsp peanuts, chopped (or almonds, sunflower seeds, etc)
Instructions
- Chop the kale, sprinkle with a pinch of sea salt or Herbamare, and massage with your hands until it softens and gets a little moist.
- Whisk together the peanut butter and vinegar until it stiffens, then add the tamari/soy sauce and water to thin it out. Add the sesame oil and ginger juice, and stir to combine.
- Toss the dressing with the kale, and serve topped with green onion and chopped peanuts.
