Makes about 12 cookies.
- 1 banana, mashed
- 1/4 cup chia seeds or ground golden flax seeds
- 1 tsp almond extract
- 1 Tbsp brown rice or maple syrup
- 1 cup shredded coconut, unsweetened
- 1/4 cup crushed pineapple, drained
- Mix everything together thoroughly.
- Drop by spoonful, slightly spaced.
- Refrigerate until firm.
- Keep them chilled in an air-tight container up to 1 week.
