Pineapple Coconut Macaroons

Prep time: 10 min. Chill time: 20 min.
Time from start to eating: 30 min.
Makes about 12 cookies.


  • 1 banana, mashed
  • 1/4 cup chia seeds or ground golden flax seeds
  • 1 tsp almond extract
  • 1 Tbsp brown rice or maple syrup
  • 1 cup shredded coconut, unsweetened
  • 1/4 cup crushed pineapple, drained


  1. Mix everything together thoroughly.
  2. Drop by spoonful, slightly spaced.
  3. Refrigerate until firm.
  4. Keep them chilled in an air-tight container up to 1 week.
