Weekday Spinach Chickpea Salad

Ingredients
- 4 cup spinach
- 2 cup chickpeas, 1 19oz can
- 1 cup cucumber, chopped
- 1 cup cherry tomatoes, quartered
- 1 cup grapes, quartered
Instructions
- Put a handful of spinach in each of 4 bowls or to-go containers. Top with the chickpeas, cucumber, cherry tomatoes, and grapes. Drizzle with your favorite dressing. This travels really well, but you can take the dressing on the side if you want it super fresh.
Notes
This is great with all kinds of dressings, but my favorite is a Maple Balsamic Tahini Dressing.
