Weekday Spinach Chickpea Salad

- 4 cup spinach
- 2 cup chickpeas, 1 19oz can
- 1 cup cucumber, chopped
- 1 cup cherry tomatoes, quartered
- 1 cup grapes, quartered
Put a handful of spinach in each of 4 bowls or to-go containers. Top with the chickpeas, cucumber, cherry tomatoes, and grapes. Drizzle with your favorite dressing. This travels really well, but you can take the dressing on the side if you want it super fresh.
