So much good stuff on one plate! Veggies, lima beans, tahini-salsa dressing, lentil dip… I also love making this kind of salad with homemade hummus, like in my free 3-day meal plan.
Quick Protein-Rich Salad
Servings: 1 serving
Ingredients
- 1 cup lettuce, torn
- 1 cup carrots
- 1/2 cup celery
- 1/2 cup Indian Red Lentil Dip, or hummus
- 1/2 cup lima beans
- 1/4 cup salsa
- 1 Tbsp tahini
Instructions
- Put the lima beans in a small pot with some water, and boil or steam for about 5 min.
- While that's happening, wash and tear the lettuce onto a plate, top with the veggies and bean dip.
- Stir the salsa and tahini together in a small bowl.
- Drain the lima beans once they're soft, put them on top of the salad, and spoon the dressing on top of everything..
