Quick Protein-Rich Salad

Ingredients

  • 1 cup lettuce, torn
  • 1 cup carrots
  • 1/2 cup celery
  • 1/2 cup Indian Red Lentil Dip, or hummus
  • 1/2 cup lima beans
  • 1/4 cup salsa
  • 1 Tbsp tahini

Instructions

  • Put the lima beans in a small pot with some water, and boil or steam for about 5 min.
  • While that's happening, wash and tear the lettuce onto a plate, top with the veggies and bean dip.
  • Stir the salsa and tahini together in a small bowl.
  • Drain the lima beans once they're soft, put them on top of the salad, and spoon the dressing on top of everything..
