Peanut Butter Black Bean Dip
I made this with the same flavors as I would use in an Asian-type peanut sauce, and loved it so much I wanted to share it with you.
Servings: 2 cups
Ingredients
- 1 1/2 cup black beans, cooked or canned
- 1 cup spinach, or another fresh green
- 1 Tbsp tamari, soy sauce (use wheat-free/gluten-free if needed)
- 1 tsp toasted sesame oil, or toasted sesame seeds for oil-free
- 1/4 lime, juice (or 1 Tbsp concentrated)
- 1 Tbsp peanut butter, or another nut/seed butter
- 1 tsp cumin
- 1 tsp ground ginger
- 2 Tbsp water, more or less, for consistency
Instructions
- Put all ingredients in a food processor. Puree until smooth.
