Peanut Butter Black Bean Dip

I made this with the same flavors as I would use in an Asian-type peanut sauce, and loved it so much I wanted to share it with you.

Ingredients

  • 1 1/2 cup black beans, cooked or canned
  • 1 cup spinach, or another fresh green
  • 1 Tbsp tamari, soy sauce (use wheat-free/gluten-free if needed)
  • 1 tsp toasted sesame oil, or toasted sesame seeds for oil-free
  • 1/4 lime, juice (or 1 Tbsp concentrated)
  • 1 Tbsp peanut butter, or another nut/seed butter
  • 1 tsp cumin
  • 1 tsp ground ginger
  • 2 Tbsp water, more or less, for consistency

Instructions

  • Put all ingredients in a food processor. Puree until smooth.
