Minty Hummus
Servings: 6 servings
Ingredients
- 1 15oz can chickpeas, or 1 1/2 cups cooked
- 1 Tbsp tahini
- 1 lemon, zest and juice
- 1 clove fresh garlic
- 1 tsp cumin
- 1/4 cup fresh mint, optional
Instructions
- Add everything to a food processor (best choice) or blender (works ok). Start pureeing, gradually adding about 1/4 cup of water, or more water if necessary to get the consistency you like. You’ll probably have to take the lid off and push down the mix that will fly up the sides of the processor.
Notes
Serve with vegetable sticks, rice crackers, or spread on a rice cake topped with cucumber slices and lettuce.
