No-Bake Matcha Energy Bites
Matcha is a great source of antioxidants, and it gives that caffeine-energy boost with L-theanine which moderates the caffeine response in your body. So basically, you get the alertness without the crash or jitters like coffee. Many of the recipes I see for energy bites are based on dates and/or coconut oil, and I wanted to try an alternative. So this one uses tahini and maple syrup (or bee-free honee) as a base instead of dates and coconut oil.
Servings: 10 bites
Ingredients
- 2 Tbsp nut/seed butter
- 1 Tbsp maple syrup, or Bee-Free Honee
- 1/2 cup coconut, unsweetened
- 6 Tbsp ground almonds, or replace half with plant protein powder
- 1 Tbsp matcha green tea powder
Instructions
- In a large bowl, mix together the nut/seed butter with the maple syrup until smooth.
- Add the coconut, almond flour (and protein powder if using), and match powder. Mix until thoroughly combined, using your hands if necessary.
- Form into small balls, about one tablespoon each. Keep in the fridge up to a week.
Notes
If you want to boost the sweetness of these bites, try adding 5-6 drops vanilla stevia to the nut/seed butter and maple syrup mixture!
