No-Bake Matcha Energy Bites

Matcha is a great source of antioxidants, and it gives that caffeine-energy boost with L-theanine which moderates the caffeine response in your body. So basically, you get the alertness without the crash or jitters like coffee. Many of the recipes I see for energy bites are based on dates and/or coconut oil, and I wanted to try an alternative. So this one uses tahini and maple syrup (or bee-free honee) as a base instead of dates and coconut oil.
- 2 Tbsp nut/seed butter
- 1 Tbsp maple syrup, or Bee-Free Honee
- 1/2 cup coconut, unsweetened
- 6 Tbsp ground almonds, or replace half with plant protein powder
- 1 Tbsp matcha green tea powder
In a large bowl, mix together the nut/seed butter with the maple syrup until smooth.
Add the coconut, almond flour (and protein powder if using), and match powder. Mix until thoroughly combined, using your hands if necessary.
Form into small balls, about one tablespoon each. Keep in the fridge up to a week.
If you want to boost the sweetness of these bites, try adding 5-6 drops vanilla stevia to the nut/seed butter and maple syrup mixture!
