Mashed Potatoes
Whip up some simple mashed potatoes to serve as a side dish to a burger, loaf, roasted portobello, or anything you like.
Servings: 2 servings
Ingredients
- 2 potatoes, chopped
- 1/4 cup non-dairy milk, (or rice, coconut, hemp, etc)
- 1 Tbsp coconut oil, optional
- pinch sea salt
Instructions
- Boil the chopped potatoes in lightly salted water for about 20 minutes, until soft.
- Drain the potatoes, leaving a small amount of water in to mash them with. Mash the potatoes with the milk, coconut oil and salt to taste. You can use a hand blender or beaters to make the potatoes extra creamy.
Notes
Great topped with Mushroom Gravy.
