Maple Dijon Burgers

Ingredients

  • 1 cup almonds, ground
  • 2 cups chickpeas, cooked or canned
  • 2 tsp dijon mustard
  • 2 tsp maple syrup
  • 1 clove fresh garlic
  • 1/2 lemon
  • 1/2 tsp dried oregano
  • 1/2 tsp ground sage
  • 1 cup spinach
  • 1 cup bell pepper
  • 1 - 1 1/2 cups rolled oats, dry, check for texture.

Instructions

  • Cut the red pepper in half, remove the stem and seeds, and put on a baking sheet face up in the oven (at 350) or BBQ (on med-low). Let that roast while you prep the other ingredients.
  • Put the chickpeas in the food processor, along with everything else except the rolled oats. Pulse until things are thoroughly combined, then add the oats and pulse until they just work into the burger mix.
  • Form the mixture into burger patties, and put them on a lined baking sheet. I like to put a cooling rack on the baking sheet to allow for air flow under the burgers as they bake.
  • Put the burgers in an oven or BBQ and bake until the outside is lightly browned.
  • In an oven, you can bake at 350 or 375 and they’ll take about 30-40 min, or about 20 min with a convection oven. On a BBQ, put it on medium-low and they’ll take about 15 min.
