Mandarin Cranberry Salad

Ingredients

  • 1 Tbsp olive oil
  • 1 Tbsp balsamic vinegar
  • 1 tsp dijon mustard
  • 1 tsp maple syrup
  • 2 cups lettuce, torn
  • 2 Tbsp dried cranberries
  • 1 orange, or 2 clementines or mandarins (zested, then peeled and sectioned)
  • 2 Tbsp walnuts, chopped

Instructions

  • Make the dressing by whisking together the oil, vinegar, mustard, maple syrup and orange zest.
  • Put the lettuce in a large salad bowl and toss with the dressing.
  • Sprinkle the cranberries, orange slices and walnuts on top and add to your Christmas feast.
