Mandarin Cranberry Salad

- 1 Tbsp olive oil
- 1 Tbsp balsamic vinegar
- 1 tsp dijon mustard
- 1 tsp maple syrup
- 2 cups lettuce, torn
- 2 Tbsp dried cranberries
- 1 orange, or 2 clementines or mandarins (zested, then peeled and sectioned)
- 2 Tbsp walnuts, chopped
Make the dressing by whisking together the oil, vinegar, mustard, maple syrup and orange zest.
Put the lettuce in a large salad bowl and toss with the dressing.
Sprinkle the cranberries, orange slices and walnuts on top and add to your Christmas feast.
