Figgy Pudding

Ingredients

  • 2 banana
  • 2 Tbsp nut/seed butter, (almond, cashew, peanut, sunflower seed, etc)
  • 1/4 cup dried figs
  • 1/4 cup medjool dates, pitted
  • 1 tsp molasses
  • 2 Tbsp flaxseed, ground
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4-1/2 cup water, approximate

Instructions

  • Put everything in a food processor or blender, and puree until smooth.
  • If you want, you can bake or chill the pudding before serving. Top it off with some chopped maple-glazed almonds, shredded coconut, madarin orange segments or whatever else you like.

Notes

Fun topping: Add orange zest to the pudding, and top with orange slices.
