Sweet Pearl Couscous Salad with Pear & Cranberries

Large pearl couscous, sometimes labeled Israeli couscous, has a hearty texture that works well in grain salads. Tossed with a very simple dressing, this sweet salad is surprisingly delicious. Sometimes the best things are the simplest.

Ingredients

  • 1 cup pearl couscous, whole wheat if you can find it
  • 1 1/2 cups water
  • pinch sea salt
  • 1/4 cup olive oil
  • 1/4 cup orange juice
  • 1 Tbsp unrefined sugar, or maple syrup
  • 1 pear, cored and diced
  • 1/2 cucumber, diced
  • 1/4 cup dried cranberries, or raisins

Instructions

  • In a small pot, combine the couscous, water, and a pinch of salt. Bring to a boil over high heat, turn the heat to low, and cover the pot. Simmer for about 10 minutes, until al dente.
  • Meanwhile, in a large bowl, whisk together the olive oil, orange juice, and sugar. Season to taste with salt and whisk again to combine.
  • Add the pear, cucumber, cranberries, and cooked couscous. Toss to combine.
