Sweet Pearl Couscous Salad with Pear & Cranberries

Large pearl couscous, sometimes labeled Israeli couscous, has a hearty texture that works well in grain salads. Tossed with a very simple dressing, this sweet salad is surprisingly delicious. Sometimes the best things are the simplest.
- 1 cup pearl couscous, whole wheat if you can find it
- 1 1/2 cups water
- pinch sea salt
- 1/4 cup olive oil
- 1/4 cup orange juice
- 1 Tbsp unrefined sugar, or maple syrup
- 1 pear, cored and diced
- 1/2 cucumber, diced
- 1/4 cup dried cranberries, or raisins
In a small pot, combine the couscous, water, and a pinch of salt. Bring to a boil over high heat, turn the heat to low, and cover the pot. Simmer for about 10 minutes, until al dente.
Meanwhile, in a large bowl, whisk together the olive oil, orange juice, and sugar. Season to taste with salt and whisk again to combine.
Add the pear, cucumber, cranberries, and cooked couscous. Toss to combine.
