Amazingness!!! You’ve worked your way through 8 months of learning how to cook delicious, healthy vegan food! How do you feel? Confident? Healthy? Happy? I hope all three!

The foods and meals we’ve made over the last 8 months are incredibly healthy, and I hope you found them really tasty! When you can make healthy food taste good, it’s so easy to eat it on a regular basis. It’s also so much easier for you to win people over to this way of eating.

Throughout the course, in each module I showed you 3 variations on the same theme. My ulterior motive was to show you the ‘how’ and ‘why’ behind cooking so that you can understand the process and make food for yourself without having to rely on recipes.

Final Assignment

Your final assignment is to make a meal for someone- whether it’s your family eating with you or having friends over for brunch or dinner.

I’ve made almost all of the recipes I shared in this course for other people, and have always had rave reviews – from vegans, omnivores, health-nuts and junk food addicts alike! It’s a good test of your cooking skills, and is also a testament to how much you’ve learned.

Remember the tips I gave you for making food enjoyable to those who aren’t used to healthy and/or plant-based eating – use the flavors they enjoy, use a bit more salt/sugar/fat/savory than you might otherwise and present it with a smile.

As usual, submit a photo of your creation – or just the smiling faces you create – to the photo gallery.

Course Text

This should be the last page of the course text if you’ve been printing as you go along: Congrats!

If you want to download the full course text, which has hyperlinks within for easier navigation on computers or tablets, here is the PDF: Heather’s Cooking Course Full Text

Please note: this is exactly the same text as the individual PDF’s that you’ve been seeing throughout the course. IF you’ve already printed those off, please don’t waste the paper printing again. I put page numbers throughout so that you could keep track of what you’ve printed and if you’re missing anything.

Advanced Healthy Cooking Course

I’m thinking of putting together an advanced healthy cooking course, covering things like sushi & sea vegetables, tempeh & tofu, casseroles, flavor combinations, balancing dishes into a meal and such.

If you’d be interested, send me a note (heather@heathernicholds.com), and let me know what topics you’d be interested in!
