Classic Side Salad

This is the classic side salad to serve alongside whatever main dish you're having, to fill out your plate and max out on nutrients from fresh veggies. Swap the lettuce for another leafy green. Swap the veggies for whatever you have in your fridge. Dress with any dressing you prefer.

Ingredients

  • 1 cup lettuce, torn
  • 1/2 cup cherry tomatoes, chopped
  • 1/2 cup cucumber, chopped
  • 1 carrots, chopped
  • 1 Tbsp balsamic vinegar
  • 1 tsp olive oil
  • pinch sea salt

Instructions

  • Whisk together the vinegar, oil and salt.
  • Lay the lettuce on a plate, top with the chopped veggies, drizzle with dressing.
