Chocolate Protein Quinoa

Ingredients

  • 1/2 cup quinoa, dry
  • 1 cup water
  • 1 banana, pureed or mashed
  • 1/2 cup non-dairy milk, optional – or water
  • 1 Tbsp protein powder
  • 2 tbsp cocoa powder, or carob
  • 1/4 cup raspberries, optional

Instructions

  • Put the quinoa and water in a pot. Turn to high to bring to a boil, then turn down low to simmer for about 20 minutes.
  • Mash or puree the banana with the non-dairy milk, protein and cocoa powders.
  • Once the quinoa is cooked, scoop it into bowls and top with the cocoa-banana mixture and raspberries.
