Chocolate Protein Quinoa

Ingredients
- 1/2 cup quinoa, dry
- 1 cup water
- 1 banana, pureed or mashed
- 1/2 cup non-dairy milk, optional – or water
- 1 Tbsp protein powder
- 2 tbsp cocoa powder, or carob
- 1/4 cup raspberries, optional
Instructions
- Put the quinoa and water in a pot. Turn to high to bring to a boil, then turn down low to simmer for about 20 minutes.
- Mash or puree the banana with the non-dairy milk, protein and cocoa powders.
- Once the quinoa is cooked, scoop it into bowls and top with the cocoa-banana mixture and raspberries.
