Salad Ingredients
- 1 14oz can black beans (or 1/2 cup dried, fully cooked)
- 1 tomato, chopped
- 1 bell pepper, chopped
- 1/4 cucumber, chopped
- 2 green onions, chopped
- 1/4 cup fresh parsley or cilantro, chopped
Salad Directions
- Rinse and drain the beans. If you’re using dried beans, they must be fully cooked before you begin. How to cook dried beans.
- Toss the cooked beans and vegetables together in a bowl, drizzled with some lime-sunflower dressing.
Lime-Sunflower Dressing Ingredients
- 2 Tbsp sunflower seed butter (or any other nut/seed butter)
- 2 Tbsp fresh lime juice (or 1 Tbsp concentrate)
- 2 Tbsp water
- Lime zest (optional)
- 1/2 tsp ground cumin
- 1/2 tsp ground coriander
- Pinch ground cayenne
- Sea salt or Herbamare, to taste
Lime-Sunflower Dressing Directions
- Whisk together the nut/seed butter and lime juice until it thickens, then add the water and stir until it’s smooth.
- Mix in the zest and spices, and taste for seasoning. Add salt to bring the flavors together.
