Asian Peanut Sauce on Kale

Makes enough for 2 large salads.


  • 2 cups kale, chopped and massaged
  • pinch sea salt or Herbamare
  • 1 Tbsp peanut butter (or almond, sunflower, etc)
  • 1 Tbsp apple cider vinegar
  • 1 Tbsp tamari/soy sauce
  • 1 Tbsp water
  • 1 tsp toasted sesame oil (optional)
  • 1 tsp fresh ginger, grated and juiced (optional)
  • 1 green onion, chopped
  • 2 Tbsp chopped peanuts (or almonds, sunflower seeds, etc)


  1. Chop the kale, sprinkle with a pinch of sea salt or Herbamare, and massage with your hands until it softens and gets a little moist.
  2. Whisk together the peanut butter and vinegar until it stiffens, then add the tamari/soy sauce and water to thin it out. Add the sesame oil and ginger juice, and stir to combine.
  3. Toss the dressing with the kale, and serve topped with green onion and chopped peanuts.
