Aduki Pumpkin Soup

Ingredients

  • 1 15oz can aduki beans
  • 2 cups pumpkin, cubed
  • pinch sea salt
  • 4 cups vegetable broth
  • 2 parsnips, or carrots, chopped
  • 1/2 cup fresh cilantro, or parsley, minced

Instructions

  • Rinse and drain the beans. If you're using dried beans, they need to be fully cooked before you start.
  • Put the beans, squash, salt and broth in a pot and simmer for 20 minutes. Add the parsnips and simmer for 5 more minutes.
  • Stir in the fresh cilantro just before serving.
