Aduki Pumpkin Soup
Servings: 3 bowls
Ingredients
- 1 15oz can aduki beans
- 2 cups pumpkin, cubed
- pinch sea salt
- 4 cups vegetable broth
- 2 parsnips, or carrots, chopped
- 1/2 cup fresh cilantro, or parsley, minced
Instructions
- Rinse and drain the beans. If you're using dried beans, they need to be fully cooked before you start.
- Put the beans, squash, salt and broth in a pot and simmer for 20 minutes. Add the parsnips and simmer for 5 more minutes.
- Stir in the fresh cilantro just before serving.
