aduki beans

cups
pumpkin

cubed
pinch
sea salt

vegetable broth

parsnips
,
or carrots, chopped
1/2
cup
fresh cilantro
,
or parsley, minced
Instructions
Rinse and drain the beans. If you're using dried beans, they need to be fully cooked before you start.
Put the beans, squash, salt and broth in a pot and simmer for 20 minutes. Add the parsnips and simmer for 5 more minutes.
Stir in the fresh cilantro just before serving.
