Sweet Potato Patties

Ingredients

  • 2 Tbsp flaxseed, ground
  • 4 Tbsp water
  • 1 cup brown rice, short-grain, cooked, fully cooled
  • 1 cup sweet potato, grated
  • 1 Tbsp green onion
  • 1/4 tsp sea salt
  • 1 Tbsp dried basil
  • 1 tsp dried oregano
  • 1 Tbsp nutritional yeast, optional

Instructions

  • Be sure to have your rice cooked & cooled before you begin. This can happen at dinner the night before, at breakfast, or an hour before dinner.
  • As long as the rice has cooled, it will be sticky enough to make into a patty. Stir together the flax and water and leave to sit while you grate the sweet potato.
  • Combine the rice, sweet potato, onion and salt in a large bowl. Allow it to sit for a few minutes, so that the salt can draw the moisture out of the potato.
  • Mix in the seasonings, then form the mixture into tight balls, and squish slightly into a patty form.
  • To bake, form into patties and lay on a parchment-lined baking sheet. Put them in an oven at around 350 F for 30 minutes, or until browned on the outside.
  • To fry, heat a pan, add a teaspoon of olive oil and put the patties in the pan, being sure to get some oil on the bottom side. Allow them to cook for 10 minutes on both sides.
