I can never have enough healthy vegan recipes for sweet potatoes. I love them. This sweet potato salad recipe is a super simple alternative to potato salad for a summer picnic or dinner party. It is lovely as a tray of large slices, or travel-friendly as a bowl of cubed vegetables in standard potato salad style
Spicy Sweet Potato Salad
Servings: 2 servings
Ingredients
- 2 cups sweet potato, peeled and cubed or sliced
- 1 Tbsp olive oil
- 1/4 tsp chili powder
- sea salt, to taste
- 2 cups tomatoes, chopped or sliced
Instructions
- Boil the sweet potato for 5-10 minutes until almost cooked, then drain. Heat a pan, then fry the sweet potato slices in the olive oil until they are brown on both sides. Season them with the spices and salt.
- For an appetizer tray, lay out the sweet potatoes on a plate topped with the sliced fresh tomatoes.
- For a salad, toss the sweet potatoes in a bowl with the chopped fresh tomatoes.
