Spiced Carrot Quinoa

Ingredients

  • 1/2 cup cooked quinoa
  • 1/2 cup carrots, grated
  • 1 Tbsp flaxseed, ground
  • 1 Tbsp nut/seed butter
  • 1/2 lime, zest + juice, or 1 Tbsp concentrate
  • pinch cinnamon
  • pinch ground ginger

Instructions

  • Toss the quinoa, grated carrots and flaxseed in a serving bowl.
  • Whisk together the nut/seed butter and lime juice until thick and creamy, then thin out with a bit of water. Stir in the spices and zest (if using).
  • Drizzle the dressing over the quinoa-carrot mixture. Feel free to squeeze the other half of the lime to add some juice over the bowl if you like.

Notes

This makes a great breakfast to take with you on the go, or if you have more time it could be baked.
