Spiced Carrot Quinoa

Ingredients
- 1/2 cup cooked quinoa
- 1/2 cup carrots, grated
- 1 Tbsp flaxseed, ground
- 1 Tbsp nut/seed butter
- 1/2 lime, zest + juice, or 1 Tbsp concentrate
- pinch cinnamon
- pinch ground ginger
Instructions
- Toss the quinoa, grated carrots and flaxseed in a serving bowl.
- Whisk together the nut/seed butter and lime juice until thick and creamy, then thin out with a bit of water. Stir in the spices and zest (if using).
- Drizzle the dressing over the quinoa-carrot mixture. Feel free to squeeze the other half of the lime to add some juice over the bowl if you like.
Notes
This makes a great breakfast to take with you on the go, or if you have more time it could be baked.
