Sesame Oat Spice Muffins
Servings: 12 muffins
Ingredients
- 2 cups rolled oats
- 2 cups water, boiling
- 1/4 cup coconut oil
- 1/4 cup unrefined sugar
- 1/2 cup whole grain flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 1 tsp allspice
- 1/2 tsp nutmeg
- pinch sea salt
- 1/2 cup sesame seeds
Instructions
- Preheat an oven to 350 degrees F. Pour the boiling water over the oats, and stir to wet the oats. Add the oil and sugar, and allow the oats to swell with the water.
- In another bowl, sift together the flour, baking soda, spices and salt. Stir this, along with the sesame seeds, into the oat mixture until just combined. Spoon the batter into greased muffin tins and bake for 25 minutes, or until they are golden on top.
Notes
If you like chocolate, try replacing 1/4 cup of the flour with cocoa powder and add another 2 Tbsp unrefined sugar.
