Red Lentil Bowl

Ingredients
- 1/2 cup red lentils, dry
- 1 cup water
- 1/2 tsp ground cardamom, or cumin
- 1/4 cup coconut milk, canned
- 1/2 cup kale
- 1 tsp fresh ginger
- 1/2 cup zucchini
- 1/2 cup carrots
- 1/4 cup bell pepper
- slice lime, juice and zest
- 1 tsp toasted sesame oil
- 1 Tbsp tamari
Instructions
- Put lentils, water, and cardamom in a pot with a tight- fitting lid, bring to a boil, then turn down to simmer until the lentils are soft (about 25-30min).
- Steam or water-saute the veggies. In a bowl, stir together the lentils, coconut milk and seasonings. You can either pour them over the veggies as is, or add them to the pan to heat lightly.
