Red Lentil Bowl

Ingredients

  • 1/2 cup red lentils, dry
  • 1 cup water
  • 1/2 tsp ground cardamom, or cumin
  • 1/4 cup coconut milk, canned
  • 1/2 cup kale
  • 1 tsp fresh ginger
  • 1/2 cup zucchini
  • 1/2 cup carrots
  • 1/4 cup bell pepper
  • slice lime, juice and zest
  • 1 tsp toasted sesame oil
  • 1 Tbsp tamari

Instructions

  • Put lentils, water, and cardamom in a pot with a tight- fitting lid, bring to a boil, then turn down to simmer until the lentils are soft (about 25-30min).
  • Steam or water-saute the veggies. In a bowl, stir together the lentils, coconut milk and seasonings. You can either pour them over the veggies as is, or add them to the pan to heat lightly.
