Put lentils, water, and cardamom in a pot with a tight- fitting lid, bring to a boil, then turn down to simmer until the lentils are soft (about 25-30min).
Steam or water-saute the veggies. In a bowl, stir together the lentils, coconut milk and seasonings. You can either pour them over the veggies as is, or add them to the pan to heat lightly.
