Quinoa Beet Salad

Ingredients
- 1 cup beet
- 3/4 cup cooked quinoa
- 1 cup spinach
- 1/2 cup avocado
Instructions
- Steam or boil the beets first, then you can assemble the rest while they cook. You can cook them whole, and remove the skin after, or peel them and chop them to cook faster.
- Assemble everything on a plate and drizzle with dressing.
