Orange Ginger Veggie Bowl

Ingredients

Orange Ginger Dressing

  • 2 Tbsp tahini
  • 1 cup orange, zest and juice
  • 1 Tbsp tamari
  • 1/3 Tbsp toasted sesame oil, or 1/2 Tbsp sesame seeds
  • 2 tsp fresh ginger

Veggies

  • 1 cup kale
  • 1 cup butternut squash, chopped
  • 1 cup sweet potato, chopped
  • 1 cup beet, chopped

Instructions

  • Whisk or puree everything until smooth.
  • Steam or water saute the veggies, then arrange in a bowl and drizzle with 2 Tbsp of dressing and pack the rest away.
