Orange Ginger Veggie Bowl

Ingredients
Orange Ginger Dressing
- 2 Tbsp tahini
- 1 cup orange, zest and juice
- 1 Tbsp tamari
- 1/3 Tbsp toasted sesame oil, or 1/2 Tbsp sesame seeds
- 2 tsp fresh ginger
Veggies
- 1 cup kale
- 1 cup butternut squash, chopped
- 1 cup sweet potato, chopped
- 1 cup beet, chopped
Instructions
- Whisk or puree everything until smooth.
- Steam or water saute the veggies, then arrange in a bowl and drizzle with 2 Tbsp of dressing and pack the rest away.
