Minted Citrus Fruit Salad

Ingredients

  • 2 grapefruit, peeled & chopped
  • 2 cups orange, peeled & chopped
  • 1/4 cup water
  • 1 Tbsp brown rice syrup, or maple syrup, optional
  • 1/4 cup fresh mint, chopped
  • 1 1/2 cups cooked quinoa

Instructions

  • Put the peels of the fruits in 1/4 cup boiling water, and simmer for 20 minutes. Remove the peels and stir in the syrup and mint leaves.
  • Pour the sauce over the chopped fruit and quinoa.
