Minted Beet Salad

Ingredients
- 1 cup beet, cooked & sliced
- 2 Tbsp tahini
- 1/4 lime, juiced
- 1/4 cup fresh mint, chopped
- 1/2 cup alfalfa sprouts, or other fresh greens
Instructions
- Either puree the tahini, lime juice and fresh mint in a small blender or whisk it until thick and creamy.
- Toss the beets with the greens or sprouts, and drizzle with the dressing.
