Minted Beet Salad

Ingredients

  • 1 cup beet, cooked & sliced
  • 2 Tbsp tahini
  • 1/4 lime, juiced
  • 1/4 cup fresh mint, chopped
  • 1/2 cup alfalfa sprouts, or other fresh greens

Instructions

  • Either puree the tahini, lime juice and fresh mint in a small blender or whisk it until thick and creamy.
  • Toss the beets with the greens or sprouts, and drizzle with the dressing.
