Minted Avocado Quinoa Salad

Ingredients
- 1 cup cucumber
- 1/2 avocado
- 3/4 cup cooked quinoa
- 2 Tbsp fresh mint
- 1/4 lime, juiced
- 1/2 cup alfalfa sprouts
- 2 Tbsp pumpkin seeds
Instructions
- Mash the avocado with lime and mint for a dressing. Assemble everything on a plate, or in a to-go container, and top with the avocado and pumpkin seeds.
