Minted Avocado Quinoa Salad

Ingredients

  • 1 cup cucumber
  • 1/2 avocado
  • 3/4 cup cooked quinoa
  • 2 Tbsp fresh mint
  • 1/4 lime, juiced
  • 1/2 cup alfalfa sprouts
  • 2 Tbsp pumpkin seeds

Instructions

  • Mash the avocado with lime and mint for a dressing. Assemble everything on a plate, or in a to-go container, and top with the avocado and pumpkin seeds.
