Lime Black Bean Dip

Dips like this black bean dip recipe make a great appetizer, with some steamed or raw vegetables and toasted pita chips. Beans are an important source of protein, fiber and complex carbohydrates in healthy vegan recipes.

Ingredients

  • 1 1/2 cup black beans, cooked or canned
  • 1 lime, zested and juiced
  • 1 Tbsp tamari, soy sauce (use wheat-free/gluten-free if needed)
  • 1/4 cup fresh cilantro, chopped
  • 1 tsp cumin
  • pinch cayenne pepper

Instructions

  • Rinse and drain the beans. If you are using dried beans, they must be fully cooked before you begin.
  • Put the beans in a food processor (best choice) or blender (works ok), along with the lime zest & juice and the tamari, with about 1/4 cup of water. Blend until this is smooth, then blend in the fresh cilantro and spices. If your blender is not mixing things well at the consistency of your dip, simply transfer it to a bowl once the beans have been blended and stir in the spices instead.
