Funky Monkey Ice Cream

Ingredients

  • 1 banana, peeled and frozen
  • 1/4 cup non-dairy milk
  • 1 Tbsp almond butter, or peanut or other nut/seed butter
  • 1 Tbsp walnuts

Healthy Bonus Add-Ins

  • 1 Tbsp cocoa nibs
  • 1 Tbsp goji berries

Instructions

  • Put the banana, almond milk and almond butter in a food processor or small blender and puree until it’s smooth.
  • The mixture can look a little chunky initially, but you’ll get past it to a creamy texture if you just keep on blending.
  • Add a splash of water or non-dairy milk if it needs it - some food processors do and some don’t.
  • Stir in the walnuts, or crumble them on top.

Notes

Variations:
Add frozen raspberries
Add fresh mint & frozen blueberries
Add chunks of healthy cookie dough
Make a healthy ice cream sandwich with healthy cookies
Top with homemade granola
Put on top of oatmeal for a decadent breakfast
Top with a square of dark chocolate
Sprinkle with toasted coconut flakes
Put in popsicle molds for healthy fudgsicles
