Easy Chana Masala (ish)
Servings: 5 servings
Ingredients
- 1/2 zucchini, or onion
- 1 14oz can chickpeas, 1 1/2 cups cooked
- 1 1/2 cups tomato sauce
- 1 1/2 tsp curry powder, more or less, to your taste
- 1 tsp ground ginger, or 1 Tbsp fresh, grated
- 1/2 cup fresh cilantro, chopped
- 1/4 tsp sea salt, more or less, to your taste
- pinch black pepper
Instructions
- Heat a pan to medium-high, and saute the zucchini in a small amount of water, or olive or coconut oil.
- Once softened, add the chickpeas and tomato sauce, stirring to combine and adding more tomato sauce or chickpeas if you wish. Stir in the spices, salt and pepper, and taste for seasoning. Leave to simmer for a few minutes, until heated through.
