1 1/2tsp curry powder, more or less, to your taste
1tspground ginger, or 1 Tbsp fresh, grated
1/2cupfresh cilantro, chopped
1/4tspsea salt, more or less, to your taste
pinchblack pepper
Instructions
Heat a pan to medium-high, and saute the zucchini in a small amount of water, or olive or coconut oil.
Once softened, add the chickpeas and tomato sauce, stirring to combine and adding more tomato sauce or chickpeas if you wish. Stir in the spices, salt and pepper, and taste for seasoning. Leave to simmer for a few minutes, until heated through.
