Creamy Basil Soup With Caramelized Beets

This looks fancy schmancy, but is actually really simple to make - so you can impress everyone, or just yourself, with a fresh and tasty soup.

Ingredients

Soup Ingredients

  • 1 avocado
  • 1/2 cucumber
  • 1/4 cup fresh basil
  • 1/4 cup fresh chives
  • 1 lime, zested and juiced
  • 1/4 tsp sea salt, (more or less, to taste)

Caramelized Beet Ingredients

  • 1 beet, peeled and grated
  • 1 Tbsp maple syrup
  • pinch sea salt

Instructions

Soup Directions

  • Put the avocado, cucumber, basil, chives and lime zest and juice in a blender or food processor. Taste for seasoning, then add the salt to taste.

Caramelized Beet Directions

  • Put the grated beet in a baking dish, and mix in the maple syrup and salt. The best way is to use your (clean) hands 🙂 Put the beets in an oven (or toaster oven) at 350 degrees F for 20-30 minutes, or until they're a little bit crispy.
