Ingredients

  • 2 slices whole grain bread
  • 3 tsp coconut oil, or vegan margarine, divided
  • 3 tsp unrefined sugar, divided
  • pinch cinnamon, or pumpkin pie spice, for sprinkling
  • 1 apple, cored and thinly sliced or diced

Instructions

  • Place a large skillet over medium heat.
  • Spread each side of the bread slices with ½ teaspoon of margarine. Sprinkle ½ teaspoon of sugar and some cinnamon on one side of each slice and flip them, spice-side down, into one side of the hot skillet. Cook for 3 to 4 minutes, until lightly browned.
  • Heat the remaining 1 teaspoon of margarine in the empty side of the skillet and add the apple. Sprinkle with 1 teaspoon of sugar and some cinnamon. Toss to coat. Cook, tossing occasionally, until softened.
  • Sprinkle the remaining ½ teaspoon of sugar and some cinnamon on each bread slice. Flip and cook the second side for 3 to 4 minutes.
  • Once the toast is browned and the apples are soft, turn off the heat, transfer the toasts to a plate, and top with the apples.
