Cilantro-Lime Brown and Wild Rice
Infuse wholesome brown rice with zesty lime and pair it with fresh cilantro to make a base for a bowl with chili-flavored beans and some cherry tomatoes and corn. This rice mix is also lovely tossed with mango chunks and shelled edamame.

Ingredients
- 1 cup brown rice, or white
- 1/4 cup wild rice, or more brown or white rice
- 1 lime, zest and juice
- 1 1/2 cups water
- pinch sea salt, plus more as needed
- 1/4 cup fresh cilantro, chopped
- 1 Tbsp coconut oil, optional
Instructions
- In your electric pressure cooker’s cooking pot, combine the brown rice, wild rice, lime zest and juice, water, and salt. Close and lock the lid and ensure the pressure valve is sealed, then select High Pressure and set the time for 10 minutes (or 3 minutes if using white rice).
- When the cook time is complete, let the pressure release naturally, about 15 minutes.
- Once all the pressure has released, carefully unlock and remove the lid. Gently stir in the cilantro and coconut oil (if using). Taste and season with more salt, if needed.
Notes
Use a fine grater, Microplane, or zester to take off the very outer layer from your lime. The zest is bursting with flavor and antioxidants! If you love lime, like me, you may want to add the zest and juice of a second lime!
