Chai Buckwheat Porridge

Ingredients

  • 1 cup buckwheat, untoasted
  • 2 bags chai tea
  • pinch sea salt
  • 3 cups water
  • 3 Tbsp flaxseed, ground, or chia seeds
  • 1 pear, chopped
  • 2 Tbsp dried cranberries
  • 2 Tbsp coconut, unsweetened

Instructions

  • Put the buckwheat in a pot, and add the tea, water and sea salt, cover and bring it to a boil.
  • Once it’s boiling, turn down to low, cover and leave the buckwheat to simmer. Stir occasionally as it cooks, about 30-35 minutes.
  • Take it off the heat, and stir in the ground flax seeds. Spoon out a portion into a bowl, and top it with the pear, dried cranberries and coconut - or other fruit and nuts if you prefer.
