
Avocado Boats
This is really easy to make but looks fancy. Serve as an appetizer if you have friends over for dinner, or just enjoy on your own. Unless you have a really big avocado, there will probably be leftover salad, which you can enjoy on the side. Have the other half of the apple as a snack.
Servings: 2 servings
Ingredients
- 1 stalk celery, chopped, or 1/4 cup cucumber, diced
- 1/2 apple, cored and chopped
- 1/2 cup spinach, finely chopped
- 1 avocado, halved lengthwise and pitted
Instructions
- In a medium bowl, toss together the celery, apple, and spinach. Drizzle with your dressing of choice and toss to coat.
- Scoop out some of the avocado halves to make a large hollow area. Mix the avocado you scooped out with the apple mixture. Divide the mixture between the avocado halves and eat directly from the shell with a spoon.
Notes
TECHNIQUE TIP: To pit an avocado, first cut it in half lengthwise around the perimeter of the pit, then twist the halves apart. Whack the blade (not the tip) of the knife into the pit so it sticks. Gently twist the knife to remove the pit. Knock the pit on the edge of the sink to dislodge it from the knife.
