Ingredients

  • 1 1/2 cup steel-cut oats
  • 4-5 cup water
  • 1 cup non-dairy milk, optional
  • pinch sea salt
  • 2 apple, cored and chopped
  • 2 Tbsp raisins
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg

Instructions

  • In a large pot, or an electric pressure cooker’s cooking pot, combine the oats, apples, raisins, cinnamon, nutmeg, and water (4 cups for a more toothsome oatmeal, 5 cups for a softer porridge), and salt. If you like creamier oats, replace 1 cup of water with nondairy milk.
  • For stovetop: Bring to a boil, then turn the heat down and simmer, covered, for 45 min, stirring occasionally.
  • For electric pressure cooker: Close and lock the lid and ensure the pressure valve is sealed, then select High Pressure and set the time for 9 to 11 minutes (more time if you like softer oats). When the cook time is complete, let the pressure release naturally for 10 minutes, then quick release any remaining pressure, being careful not to get your fingers or face near the steam release.
  • Top with a drizzle of maple syrup or unrefined sugar if you like.
