Zucchini Hummus

Ingredients

  • 1 zucchini
  • 2 cup aduki beans, cooked - or another small bean
  • 4 Tbsp tahini
  • 2 tbsp apple cider vinegar, or lemon juice
  • 2 tsp cumin
  • 1 tsp paprika, regular or smoked
  • 1/4 cup fresh parsley, or cilantro
  • 1 clove fresh garlic

Instructions

  • Puree everything in a food processor until smooth.
