Zucchini Hummus

Ingredients
- 1 zucchini
- 2 cup aduki beans, cooked - or another small bean
- 4 Tbsp tahini
- 2 tbsp apple cider vinegar, or lemon juice
- 2 tsp cumin
- 1 tsp paprika, regular or smoked
- 1/4 cup fresh parsley, or cilantro
- 1 clove fresh garlic
Instructions
- Puree everything in a food processor until smooth.
