Sweet Potato Smoothie
Servings: 1 serving
Ingredients
- 1 sweet potato, medium sized, 1 1/2 cups
- 1/2 cup non-dairy milk
- 2 Tbsp dates
- 1/2 tsp cinnamon
- 2 tsp fresh ginger
Instructions
- Cook the sweet potato by either baking it whole, or peeling, chopping, and steaming.
- Puree everything in a blender until smooth, adding water as you want or need.
- This can also be really nice as a heated porridge if you feel like eating rather than sipping, or mix the sweet potato with other veggies and have the dates for dessert.
