Sweet Potato Smoothie

Ingredients

  • 1 sweet potato, medium sized, 1 1/2 cups
  • 1/2 cup non-dairy milk
  • 2 Tbsp dates
  • 1/2 tsp cinnamon
  • 2 tsp fresh ginger

Instructions

  • Cook the sweet potato by either baking it whole, or peeling, chopping, and steaming.
  • Puree everything in a blender until smooth, adding water as you want or need.
  • This can also be really nice as a heated porridge if you feel like eating rather than sipping, or mix the sweet potato with other veggies and have the dates for dessert.
